Dose per 2 teglie da forno 25×40 cm
Per l‘impasto:
- 750 g farina 00
- 400 g acqua fredda
- 50 ml olio extravergine
- 25 g lievito di birra
- 10 g zucchero o miele
- 25 g sale
Per il condimento:
- 800 g salsa di pomodoro
- 6 g sale
- 3 cucchiai di olio extravergine
- 4 mozzarelle
- Origano a piacere
- Basilico a piacere
- Ingredienti preferiti di farcitura: prosciutto cotto, wurstel, carciofini, salame, acciughe…
Sciogli il lievito nei 400 g di acqua.
Impasta farina, acqua con lievito, zucchero e olio o a mano o in planetaria col gancio per almeno 10 minuti. Aggiungi il sale e impasta altri 5 minuti.
Ora dividi l’impasto a metà e crea due pallotte. Mettile a lievitare ciascuna in un recipiente unto con olio capiente 3 volte il volume dell’impasto per una prima fase di lievitazione. Copri con la pellicola o un coperchio e lascia raddoppiare il suo volume a temperatura costante (ideale e massimo 27 °C). Impiegherà circa 2 ore di tempo.
Ora ungi le due teglie da forno con abbondante olio.
Rovescia un impasto per volta nella teglia senza rimpastarlo ma semplicemente appiattendolo senza strapparlo cercando di non rovinare il lavoro di allungamento della lievitazione in cui si formano gli alveoli, che andranno allargati con un movimento delle mani che prevede l’adesione del palmo della mano appoggiando prima la parte del pollice e poi quella verso il mignolo, ripetendo fino a completa stesura dell’impasto.
Ora lascia lievitare l’impasto una seconda volta, circa un’ora e mezza in un posto a temperatura costante e lontano da correnti di aria (il forno spento va benissimo).
Ora accendi il forno a 200°C.
Condisci il pomodoro con sale e olio. Stendilo delicatamente sulla base della pizza.
Taglia la mozzarella e mettila in un piatto fondo in modo che l’acqua che esce cola nel piatto.
A forno caldo, inforna la base della pizza e falla cuocere per 10 minuti.
Ora tirala fuori e velocemente aggiungi la mozzarella e i tuoi ingredienti preferiti che hai scelto. Fai cuocere altri 12-15 minuti e gustala!!
